Greens is probably the most important vegetarian restaurant in the country, if not the world, primarily for its historical role in redefining vegetarian dining. They brought it into the mainstream. Greens made vegetarian safe for fine dining without making it pretentious. I am an omnivore, but I eat at Greens when I have the chance, and because of it, I do order veggie entrees at other restaurants when they are appealing. The founding chef was Deborah Madison; currently, it's Annie Somerville is at the helm. She is in Building A, Fort Mason Center, San Francisco, CA 94123. 415-771-6222 http://www.greensrestaurant.com
