This is a great Minnesota debate at potlucks statewide and throughout the midwest. But I think we all have a favorite, or five, that we wouldn't mind if Mom made everytime we went home. Let us know what you like, by listing ingredients, or adding a recipe. ( Edited by plmiller )

Lasagna

Tunafish Casserole

1 can tuna (7 1/2 oz) 1 can cream of chicken soup 1 small can green peas 3 cups noodles, cooked 1/2 teaspoon salt 1/2 cup milk Flake tuna in casserole dish. Add soup to tuna. Add noodles, salt, and peas. Stir all together. Bake 30 minutes at 350 degrees.

Scalloped Potatoes with Ham

Cook Time: 1 hour, 45 minutes Ingredients: 1 pound fully cooked ham slice, 1/2-inch thick 5 cup thinly sliced potatoes 1 can (10 1/2 ounces) cream of mushroom soup or cream of celery soup 1/4 cup milk 1/2 cup chopped onion 1/4 cup chopped green bell pepper dash pepper 2 tablespoons butter 1 cup shredded Cheddar cheese, optional Preparation: Directions for scalloped potatoes Cut ham in bite-size cubes. Place half of the potatoes in a greased, shallow, 2-quart baking dish. Cover with ham pieces. Top with remaining potatoes. Combine soup with milk, onion, green bell pepper, and ground black pepper; pour over potatoes. Dot with butter. Cover with foil and bake at 350° for 1 hour. Remove covering; bake 30 to 45 minutes longer, or until potatoes are done. If desired, sprinkle shredded Cheddar cheese over the top of scalloped potatoes the last 15 minutes of baking time. Scalloped potatoes serves 6.

Chicken and Broccoli Casserole

CHICKEN BROCCOLI CASSEROLE Printed from COOKS.COM -------------------------------------------------------------------------------- Steam 4 chicken breasts. Skin and bone. Cook 2 packages frozen broccoli. Drain. Make sauce of 1 can cream of celery soup, 1 can cream of chicken soup, 3/4 cup of mayonnaise, juice of 1 lemon, 1 1/2 teaspoons curry powder, 1 teaspoon salt. Place cooked broccoli in large casserole dish, tear chicken into pieces, pour sauce over, top with grated cheese. Bake at 325 degrees for 30 minutes.

Breakfast Casserole

Ingredients: 4 slices bread 12 to 16 ounces bacon or sausage, cooked and drained 2 cups shredded cheddar cheese 6 eggs, beaten 2 cups milk 1 teaspoon dry mustard Preparation: Grease the bottom of a 9"x13" pan. Tear up 4 slices of bread and place in the bottom of the pan. Sprinkle cooked crumbled bacon or sausage over bread pieces. Sprinkle cheddar cheese over the bacon or sausage. Mix eggs, milk and mustard together; pour over casserole. Bake at 350° for 35 to 40 minutes. Serves 4 to 6. This is a simple recipe...shown above , mushrooms and parsley have been added...tons of variations.

TaterTot Hotdish

This is a newer classic(since tatertots were brought to the market). To put this together: Layer lightly browned ground beef with chopped onion, parsley, and spices you like, to cover bottom of casserole dish, add a layer of frozen green beans(or vegetales of your choice), then layer on a can of condensed mushroom soup(right out of the can). Top with frozen tatertots, BAKE in oven at 350 degrees for 1 hour and 15 minutes.

Chili-Mac Hotdish

This I do on the stovetop in a big Dutch oven pan. Brown hamburger with chopped onion, chopped celery and minced garlic. When completely browned, add 1 cup dry noodles(your choice), cover with water, let come to boil, then turn down to simmer until noodles are ALMOST soft. Add 3 cans of beans(chili, kidney, black, navy, pinto)your choice, add a can of diced tomatoes and a can of tomato sauce or tomato paste. Season with a tablespoon of chili spice, teaspoon of cumin, oregano, basil, onion and garlic powder, celery seed, salt and pepper to taste. You can simmer this for an hour or all day...just don't let it burn on the bottom(stir regularly).

tortilla casserole

MEXICAN CASSEROLE Printed from COOKS.COM-------------------------------------------------------------------------------- 1 lb. ground beef 1 pkg. chili powder 1 onion, chopped 1 pkg. frozen tortillas 1 can Mexican style beans 1 can cream of chicken soup Grated cheese to taste 1 can tomato and chilies Brown beef, chili powder and onion together and drain. Put in greased casserole in this order, beef, tortilla broken in pieces, beans, cheese, tomatoes, chicken soup and cheese. Bake at 350 degrees until done (about 30 minutes). Serves: 6 to 8.

They'd be better if you wrapped them in buttered bacon though. ;-)

But a hotdish/casserole can keep a family of 6 well fed at a minimal cost...even with tatertots...everything in moderation
