Chili-Mac Hotdish

This I do on the stovetop in a big Dutch oven pan. Brown hamburger with chopped onion, chopped celery and minced garlic. When completely browned, add 1 cup dry noodles(your choice), cover with water, let come to boil, then turn down to simmer until noodles are ALMOST soft. Add 3 cans of beans(chili, kidney, black, navy, pinto)your choice, add a can of diced tomatoes and a can of tomato sauce or tomato paste. Season with a tablespoon of chili spice, teaspoon of cumin, oregano, basil, onion and garlic powder, celery seed, salt and pepper to taste. You can simmer this for an hour or all day...just don't let it burn on the bottom(stir regularly). ( Edited by plmiller)

This is a classic hotdish, which tastes better when it has been refrigerated as leftovers, served the next day. There are millions of variations, when you change the kind of meat, the noodles, or the beans that you choose to put into the dish. Always good, too, when served with a shredded cheese topper and crusty bread or crackers.
