Every year after thanksgiving my dad would put cut out the rest of the meat from the leftover turkey and put the carcass and the shreded meat in the freezer. A week or two later he would make great congee with the carcass with some diced up meat, and then the shreded meat would be made into pan-fried turkey noodle (egg noodle or rice noodle sometimes). It's great because I would see coworkers eating turkey sandwich all the time while I have different dishes. Here I've put in more variations that when I get to carve my first turkey in the future, I will make the other dishes. Hopefully this will give you some ideas as to what to do with the one sitting in your fridge right now. Please vote for your favorites here. ( Edited by geediu )
