For me there are two ways to learn software. The first is being given a project that demands you learn it quickly, and the second is software training with real projects being demonstrated. There are a lot of good sites for general software learning through video training, list any others here! Include if its primarily pay or free content! ( Edited by mdudlik )

Lynda.com does an okay job with video training, there are a lot of titles, though sometimes they don't go in depth enough for me to get as much out of them as i'd like http://www.lynda.com
Total training is good, in depth and can be really informative, the software titles are limited though, and its all pay. http://www.totaltraining.com
Good training, primarily for 3d software, the cinema4d is great. http://www.cmivfx.com
